SHARE THE GOODIES!!

Okay so I have gotten a great idea from my sister. My sister Camie said that she saw on "Oprah" a lady who wanted to better herself. So she decided she was going to take a year and get more educated on things that she was interested in or that she thought would better herself. So she separated the year out into twelve months and decided upon 12 topics she wanted to study. She would spend a month reading and researching information on that topic to be able to understand it better and then apply the learnings into her life.....Well I decided to do this. I started the month of August and I am studing "Health and Nutrition" since it is one of my favorite things right now. Lets just say I have already learned a ton, and now I am on a huge health kick...So I wanted to post this blog to ask all the readers to share with me their favorite, healthy recipie. And also encourage you to do this little challenge with me, I think it is going to be so helpful and I will actually feel like I am not getting dumber and dumber each day as all I do is talk baby talk. ( Which I love more than anything in the world, but honestly what am I going to do when I have to help my kids out with their homework....Yikes.) Anyway, it is a little something for me that I think will be great. Here are a few of my healthy recipies.

PUMPKIN PANCAKES
1 1/2 c. Whole Wheat Flour
1/2 c. Quick Oats
1 T. Baking Powder
1 T. Wheat Germ
1 T. Ground Flax Seed
1 T Vital Gluten ( I don't always add this.)
1 T Raw sugar or Splenda
1 t. Salt
2 Large Eggs
2 c. Milk
1 c. Water
2 T Olive Oil (or Applesauce)
1 c. Canned Pumpkin Puree
1/2 c. Cholcolate Chips
1/2 c. Ground Nuts (Optional)
Enjoy!! It is great with Vanilla Yogurt, or Sugar-free Suryp.
ARIENNE"S BRAN MUFFINS
2 c. Boiling water
2 c. All Bran Cereal
1 Quart low-fat Buttermilk
4 Eggs
1/2 C. Oil (or Applesauce)
1/2 c. Canned Pumpkin Puree
1 1/2 c. Splenda
1 T Baking Soda
1 t. Salt
4 c. Whole wheat flour
1 c. Oatmeal
4 c. Bran flakes, any brand
1-2 c. raisens
Mix together the boiling water and All bran. Let sit for a minute. Add buttermilk, oil, eggs. Mix well. Add sugar, soda, salt, mix again. Add other ingredients and mix. Cook for 20 Minutes at 375. Enjoy!!

I am totally in!! I was just thinking the same thing the other day that when it comes time to help with homework, I wonder if I am going to be able to help! I am excited. I will need to think of some ideas for the last couple of months!

I've got a couple suggestions to fill up the rest of your months. I think that the history and origin of coloring books and kangaroos would be superb choices to focus on. Also consider midgets and dwarves.

Jenn, you are so awesome to find time to better yourself with all you have going on! What a great idea though. I was helping my son with his summer math packet and needed a calculator. THAT'S BAD!!! I just might have to join you in your quest. I could use the help and motivation!
